Thai Hom Mali Rice, from Mookarun Rice Mills

There are many ways to prepare Thai Hom Mali rice — each a quiet ritual in its own right. Choose the method that suits your rhythm and setting:

Simmering in a Pot (Traditional Method)

  • Use 1 cup of rice to 1.2–1.3 cups of water.
  • Lightly rinse once or twice to awaken the grain while preserving its natural aroma. Let the rice sit in water for 5–10 minutes before cooking.
  • Bring to a boil over medium heat. Once boiling, reduce to a low simmer and cover tightly. Cook for 12–15 minutes, then remove from heat and allow it to rest covered for 5–10 minutes before serving.

Steaming in a Bamboo or Electric Steamer

  • Soak rice in water for 30–60 minutes, then drain.
  • Place in a cloth-lined steamer basket, over gently boiling water, and steam for 25–30 minutes. Halfway through, flip or fluff the rice to ensure even cooking.
  •  This method preserves the grain’s delicate structure and fragrance — ideal for serving with dishes that celebrate individual texture.

Using a Rice Cooker

  • Rinse the rice lightly, then place in the cooker with 1.1–1.2 parts water to 1 part rice (slightly less than stovetop due to reduced evaporation).
  • Let it sit for 5–10 minutes before switching on. Most cookers will automatically switch to “warm” once ready. Let it rest for another 10 minutes after cooking completes before fluffing with a wooden spoon or paddle.
  • A rice cooker brings consistency and convenience to a busy household, but patience in resting is still part of the ritual.

Key Notes

The water ratio is not a strict rule — feel free to adjust depending on your preference.

  • Less water = firmer, grainier rice
  • More water = softer, smoother rice

After cooking, stirring helps balance the rice, as the outer layer may become firmer while the inner layer overcooks. But if you’re seeking variety in texture — some crisp on the edges, some silky in the centre — feel free to leave it untouched. Rice, like ritual, invites both structure and spontaneity.

Yes — Hom Mali is both a centrepiece and a canvas: Hom Mali listens — it absorbs, balances, and gives!

  • Cook with dates for a gentle floral sweetness
  • Simmer with milk or coconut milk for warmth and softness
  • Add ginger and spring onion for brightness and depth
  • Pair with salted meats, cured sausage, or salted egg for richness — the rice absorbs flavour while grounding intensity

You can also combine it with other rice varieties for texture, such as a touch of glutinous rice for chew, or infuse it with butterfly pea flower (blue matcha) for a vibrant hue and cooling aroma. The result is not just flavour — but a sensory experience of colour, temperature, and memory.

For the best fried rice:

  • Use less water during cooking to make the rice firmer
  • Allow the rice to cool fully, ideally overnight in the fridge
  • For best results, store uncovered in the fridge to let excess moisture escape
  • This yields grains that are separate, supple, and stir-fry ready — not sticky or overly soft
  • You can also mix rice types for complexity, or add natural tints such as blue matcha for festive or meditative meals.

Thai Hom Mali rice is one of the world’s most beloved aromatic varieties — but not all Hom Mali is equal. Ours is grown in the dawn-lit plains of Ubon Ratchathani, where the soil is light, the water is soft, and the harvest follows the sun’s rhythm.

  • What sets this grain apart is its natural pandan-like fragrance, released upon cooking, its soft yet structured texture, and its light sweetness that holds its own whether eaten plain, with vegetables, or in sacred festive meals.
  • Hom Mali is not a filler — it is a centerpiece, a grain that carries memory, shaped by tradition and care. It is served at weddings, homecomings, and ancestral tables — yet is humble enough for the quietest bowl.

A simple and meaningful way to appreciate the quality of your rice is through the Black Board Test and White Board Test — both traditional methods used by millers and families alike to check for authenticity, fragrance, and absence of impurities.

Black Board Test: Spread a few spoonfuls of raw rice on a dark surface. High-quality Hom Mali rice should show a natural off-white hue, slightly translucent with a gentle sheen. You should not see powdery residue, broken grains, or artificial brightening. This test helps reveal any polishing agents, broken rice, or whitening chemicals that compromise the grain’s integrity.

White Board Test: Place the same grains on a clean white surface. Bring the rice closer and take in its aroma — authentic Thai Hom Mali rice should carry a light, pandan-like fragrance, even before cooking. A chemical or musty smell suggests aging, improper storage, or artificial aroma enhancers.

These tests aren’t just about quality — they’re a small act of reverence, helping you see and smell what your body will receive. Pure rice reveals itself with fragrance, form, and humility. We invite you to try it — and witness the quiet integrity in every grain.

Yes — Thai Hom Mali rice is suitable for children, adults, and elders alike. Its softness and purity make it gentle on the stomach, and it provides balanced, digestible energy without excess.

  • As children grow, and as elders begin to conserve more energy than they expend, Hom Mali rice offers a nourishing foundation. In traditional wellness philosophies, it is seen as supportive of breath (Qi) and circulatory flow, making it ideal for those who seek gentle replenishment.
  • It is also a beautiful grain for postpartum nourishment, convalescence, or as part of light fasting rituals — where what you eat must be pure, whole, and reverent.

Hom Mali rice adapts to every time of day, every stage of life, and every kind of table:

  • In the morning, as congee or rice soup, it is warming and easy to digest — a peaceful way to begin.
  • At midday, it holds other ingredients with ease — balancing vegetables, meats, or broths without overpowering them.
  • In the evening, it becomes a soft comfort — a vessel of calm, anchoring the body after motion.

It is not just food — it is a return. It does not crowd the body — it makes space within it.
